Logs in JSON

Hello,

It would be fantastic to have all logs available in JSON format.

I manage multiple OvenMediaEngine servers and centralize all the logs for easier management. However, the current logging system has been somewhat challenging to parse (single line + multi line). In my opinion, having logs in JSON format would greatly improve usability and efficiency on production environment.

If you have plans to implement this feature, please let me know!
