Whenever I try opening my Cart Assembler from steves carts, it causes my game to crash to desktop. I attempted this twice, the crash logs are identical but I've included both just for posterity sake.
Ran into this same issue and was able to reproduce it reliably.
When an item is in the slot where the assembled cart is placed upon completion, when the chunk gets reloaded (exiting and reopening the world works too), attempting to open the block's UI crashes the game as above. If the chunk containing the Cart Assembler is not unloaded and the world is not closed after the cart finishes assembling, the block can be opened and the cart can be removed without crashing. This happens for any cart, you can throw just a Standard Hull in and hit Assemble for a 5-second assembly time with the same result to reproduce.
A very similar issue was fixed back in November in either version 1.2.11 or 1.2.12, but that was with the assembling timer and not the completed assembly: CreeperHost/StevesCarts2#44 . Additionally, this crash doesn't seem to happen in an environment with only Steve's Carts 2 installed
