🚧 What needs to be done

Build the activity SQL table based off the of ERD produced in SPIKE: Update arch diagrams with message parser and SQL DB #2943
Add the table to the migration - see how the SQL script gets applied

🤔 Why it needs to be done

So we can log activity data for activity homepage

🏗️ Acceptance Criteria

Given I'm logged into the database
When I query this new table
Then it exists
