Minimal changes based from #6 to update pact-net to 4.x

Creating a smaller PR, which contains changes for the tests, but not the underlying API.
We could possibly create a duplicate workshop with the minimal api pattern, if there is use.
Ultimately I think we will want condense our two repos for dotnet workshops, into one
see comments on pact-foundation/pact-workshop-dotnet-core-v1#25
