I seem to keep writing you and then it resolves after some time and then let it go. Basically everything was working great and then after a reboot the resolution is not auto setting to my screen size. The logs show it's setting it just doesn't take. What happens with Moonlight on Windows connecting to the sunshine server desktop.
Connects and shows a resolution similar to the device but small bars on the left and right.
Screen flickers after a few seconds and sets to 4k 3840x2160 resolution.

Setting screen resolution to 1600 x 1200 x 60
However it's not 1600 x 1200. It's 3840x2160. I have tried updating to the latest nightly of Sunshine and this script to no joy. Tried instlaling the latest NVidia drivers but that didn't help. Rebooted and one time it came up as expected. Second time I connected went back to this again.

Side note after a reboot again it worked one time then went back to this. One additional thing I can share. If I leave the display manager open in Windows after disconnecting and then connect again, I connect with the black bars on either side and it shows it's on display 1 which is the main display. Then the screen refreshes and is in 4k (not resolution of my screen) and shows it's on display 2 now. So not sure if something is delayed and the resolution change even though second, is firing before the display switch happens.
