As a Moodle User I want at least explanations for the partly mysterious fields I am confronted with when I just want to upload my video to Moodle.

There is a possibility to add that "description" in the Upload Video Form, but only for metadata catalogs.
This is achieved via admin settings under Site Administration > Plugins > Blocks > Opencast Videos > General Settings > Event Metadata => in the table there is a column called "Field Description", which does the job!

It also applies for the Series Metadata!
