I believe it's a little difficult to tell an Apparition's preference just from animations alone, and the only way to be sure of which one it is is to see which mob it's hostile (or not hostile) toward that the other preferences do or do not attack.
If this is for difficulty purposes and they are intentionally meant to be viewed as a sort of "dice roll" for whether they'll attack you/a certain mob or not, I understand! I simply thought it would be neat to give them different textures that change their facial expression depending on their preference, and even made some possible designs to use for each one if you'd like:
