Install "hof-util-countries" package

The getting started guide depends on "hof-util-countries" but this now seems to be a separate package.
Either the guide needs to be updated, to add npm install hof-util-countries --save or the initial project should have this dependency by default.
I couldn't figure out how to do the latter.
