Update the sample config to match the legacy sample data so it can be used for a run rather than just a template of unrealistic values

Also updating pydantic default values at the same time

Depending if weekly/daily/hourly profiles are used in multiple locations may need defaults set e.g. in irrigationparams directly
Land cover also a problem as uses same class for defaults, should be assigned per land cover
Roof + wall layers have the same problem
