Feature description and context

Now that we have a foundation for data processing in opensearch, we can start indexing across the biological data of the platform. Sightings are functionally a fairly light object, but getting them in opens up the single-search-filter view if completed with Individuals (#910)

Feature sign-off requirements

Sighting data is indexed in opensearch across the following fields:
