Is there any way to run multiple ETCE simulations simultaneously in the same machine? My team is trying to look into running ETCE simulations in the same machine but through different user accounts and I'm wondering if it's possible to segment each simulation to each individual user. As of now, running a 2nd simulation while another is running triggers the "Another simulation is running. Please run stop_demo.sh" message.

There is no baked in support to run multiple emulations at the same time. Your best be may be to create a docker image and have each user stand up their own container and run ETCE inside.
