I mean, we could just copy-paste Monero's page and change the wording to "Aeon"? It would not take more than maybe 10 minutes and make the project seem special or something with a legal page right?

Almost all cryptocurrencies are open source monetary programs. Do Fiat currencies have legal disclaimers with all the mumbo jumbo? Regulations- Yes. Crypto is fairly unregulated.
These pages are written to prevent any legal recourse against anyone related to the project. There really are no assets to protect since its an open-source project and pretty much everyone is anonymous.
Is a legal page needed? It does not hurt to have one but it really isn't required.
