Make use of new collections api

React Aria released a new collections API package: https://github.com/adobe/react-spectrum/tree/main/packages/%40react-aria/collections

This package should in theory let us resolve some of the long standing issues with collections components

Tabs are mostly working, but you can't nest them for some reason. When attempting to nest them, the children tabs components end up with an empty collection set & I'm not sure how to resolve that
