Where to find settings/options for JSON config?

First off I want to thank you for continuing this project so everyone in the community can benefit!

2 questions:

1. Where is the best place to see the different settings/options for run_config.json and other files to modify the STL's.
2. What is the difference between producing an STL with OpenSCAD and CadQuery? Why should I choose one or other?
