This PR switches to using uv for the documentation build which whould drastically speed it up.

Putting this on hold for now as ReadTheDocs does not allow to combine build.commands with installing apt packages, which results in Graphviz missing. However, graphviz is required for drawing coupling maps as part of the compilation demonstration.

The switch to uv saves at least a minute per build though. So it would be nice to have.
