Postgres image in docker-compose is only built for linux/arm64 #797

A multi-platform build would be helpful for development for europe-west1-docker.pkg.dev/marble-infra/marble/postgresql-db:latest.

I had to build one from postgres:15 for linux/amd64 (for my WSL2/Ubuntu).
