I'm not an expert on most of those ideas by any means, but I could convey well why those projects could be really important to students, and help them overcome some of the initial basic programming hurdles, as well as point them towards state of the art/leaders of those fields.
If there's any opportunity to liaise with the students regarding this type of project that might be in everyone's interest, let me know.

I heard about your school from a recent The Times article, and it seemed awesome.
I have some interesting (to me!) simulation/scientific computing/webdev ideas that could make for good projects for some of the older students.
