You'd need to regenerate the bitmaps and font config stuff (see https://github.com/dataarts/dat.guiVR/blob/master/font/robotosdf.bmfc, I guess the chars entry would need to change along with probably other things), if you wanted all unicode chars included at reasonable resolution it'd end up being lots of texture data... So unfortunately I guess it might not be trivial if you want to support eg Chinese language. In any case you'd need to be prepared to roll up your sleeves and modify the library.
