Pin the full proxy version installed by the automation

At the moment, the Ansible automation deploys the latest minor version of the specified major version of the proxy image (e.g. 2.x).

As part of the effort towards having a unified version strategy for all the ZDM components, we should pin the full version of the proxy in the Ansible playbooks. The user can still change this version if they wish, but this gives us a stronger link between the automation version and the deployed proxy version than we currently have.

This ticket is part of the first set of changes to improve the ZDM Versioning and support version-based documentation.
