Short description
This PR will hopefully upgrade Xcode on CircleCI. At the moment, I have only removed the workaround added in #2557 that was added because Mapbox and Xcode 15 weren't playing along. If I run this on my local Xcode 16, I can build the iOS app fine, and even open the Maps (thus fixing #2813), though I get a warning about a string ref named "source".
It would be cool if one or two more people can check on their Xcode 16 if this works, I'll then continue working on the actual upgrade.
