[Request]: Moving AI Assistant to GA in 8.12 (but keeping AI Assistant functions as Beta)

Description

AI Assistant will be moving from Tech Preview to GA. AI Assistant functions will be listed as Beta. We need to add disclaimer for chat area that AI "May occasionally generate incorrect information".

Also will need to add section for 8.12 for AI Assistant known issues.

Which documentation set does this change impact?

Stateful and Serverless

Feature differences

Enterprise License is required on Stateful. Essential (default) license is required for Observability project. There was an outstanding issue on Serverless for the AI Assistant knowledge base because the ELSER ML is required.
