[Request]: Update data collection section in AI Assistant for Observability

Description

What: We're introducing user feedback collection for AI Assistant answers. Users can click "positive" or "negative" on every answer that the LLM provides, and Elastic will then collect these answers in its EBT Telemetry system.

When: This will be introduced in 8.12 and potentially sooner on Serverless (I will need to double check exactly when though).

Why: This will allow Elastic to better understand how customers are using the AI Assistant feature, and will provide us with telemetry on how to improve performance.

• Adds EBT event for User Prompts, refactor existing EBT event tracking to be typesafe kibana#173175

docs/ai-assistant/ai-assistant.mdx mention that Elastic does not collect user prompts, with this new feature that is no longer correct.
