- 4 teaspoons of sumac, soaked in 3 teaspoons warm water for 15 minutes.
- 3 tablespoons (or more) fresh lemon juice.
- 2 small garlic cloves, minced.
- 2 teaspoons (or more) white wine vinegar.
- 1/2 teaspoon dried mint.
- 3/4 cup extra-virgin olive oil.
- Salt.
- Pita breads, halved, toasted until golden brown, broken into bite-size pieces.
- Tomatoes depending on how many people you have.
- Cucumber depending on how many people you have.
- 6 spring onions, thinly sliced.
- 1 cup chopped parsley leaves.
- 1 cup fresh mint leaves.
- 1/4 cup extra-virgin olive oil.
- Salt.
Combine sumac with water, 3 tablespoons lemon juice, garlic, 2 teaspoons vinegar, and dried mint in a small bowl. Gradually add oil, whisking constantly, until well blended. Season with salt; add more lemon juice, and vinegar, if desired.
Fry the pita pieces with a bit of oil (olive and corn oil works). Season pita to taste with salt.
Mix tomatoes and next 6 ingredients in a large bowl. Add the fried pita pieces and mix again. add half of the dressing then mix again. At last add all the dressing on top and serve it!!.
