Bumping version to python 3.11 leads to OverrideNeeded/Assertion error

Figure out what blocks python 3.11. Probably could be related to kfp, but the error hints to jinja/mlflow.

Doing dependency resolving with poetry lock on only 3.11 it fails with lesser error:

Limiting it even further (removing both mlflow/kedro-mlflow has lead to the fact that underlying error for all those cases is this AssertionError. python-poetry/poetry#8202 Hints what could be going on

Turns out addressing this was just a matter of moving away from Poetry... #179
