Since timeapi.org no longer offers its service, the examples of the library are no longer usable.

The examples and using my verified working endpoints always result in an Assertion error being thrown by the Photon at some point when httpsClientConnection method is invoked.

Same here. Not only that, it threw the Photon into an SOS-10 boot loop and I was unable to flash any more code via wifi after that. I had to do a usb flash to recover the device.
