Both the PDF Info dictionary entry and the corresponding XMP Dublin Core namespace tag support a string field called Producer in PDF Info dictionary and Publisher in XMP Dublin Core. The UI can use it, with an UI field called Publisher to allow us to write the Publisher name into it, as opposed to having to write it in the keywords, like I currently do.
