This problem persists in ubuntu derivatives. I think it might be specific to OpenJDK. I was running Oracle java until a recent reinstall, and I don't remember having this font problem.
java -version
openjdk version "11.0.9.1" 2020-11-04
OpenJDK Runtime Environment (build 11.0.9.1+1-Ubuntu-0ubuntu1.20.04)
OpenJDK 64-Bit Server VM (build 11.0.9.1+1-Ubuntu-0ubuntu1.20.04, mixed mode, sharing)

I tried a number of different fonts, and found a couple that work pretty well.
"Coolvetica regular" looks really good, but loses the super cool LCD look of the current digital-7 font. The license is free for both personal and commercial use.

"balls on the rampage" almost looks like an LCD display, but the license is for personal use only.
