Improve instructions for Quarkus and tests

When running the tests in the demo, I saw some issues I didn't have a chance to look into
* Why are some tests failing for pact? (not totally sure what my notes mean here)
* It seemed some tests not running on change? With continuous testing, required tests should run on changes. Maybe I am reading the logs wrong?
* Can we get the error message cleaner? And less sensitive to order? (not totally sure what my notes mean here)
