should be cooked the day before: -- to a small pot:
- add enough water to cover pork shoulder and simmer 20 mins
- add 1 cup soy sauce, 3oz dark soy sauce (tamari), 1 cup cooking wine, handful of green onions
- seal with a drop-lid and allow to simmer 2-3 hrs
- hard-boil for ~8 mins, then drop into ice bath
- save the pork juices!!
- cool em down and pour over ramen eggs (eg in an ice bath). seal.
