Phase 1

chashu

should be cooked the day before: -- to a small pot:

  1. add enough water to cover pork shoulder and simmer 20 mins
  2. add 1 cup soy sauce, 3oz dark soy sauce (tamari), 1 cup cooking wine, handful of green onions
  3. seal with a drop-lid and allow to simmer 2-3 hrs

ramen eggs:

  1. hard-boil for ~8 mins, then drop into ice bath
  2. save the pork juices!!
  3. cool em down and pour over ramen eggs (eg in an ice bath). seal.
