Please update changelog, esp. for 1.2.0 and why tags only since 1.1.1?

I can see a tag for 1.2.0 - https://github.com/kivy/pyjnius/tree/1.2.0

@AbdealiJK I'm asking for a changelog as we've seen before.
Please improve:

@rapgro sure, not disagreeing about that. ChangeLogs would be nice. I've had to go through code a few times to see what was fixed and stuff - and much better to avoid thought.
But just wanted to mention tags do exist. Again, would be nice to make "github releases" with appropriate release notes

@AbdealiJK Just as a hint: Generally, we could read through the individual project's commits list provided from GitHub instead of heavy code analysis but it's also wasting of too much time due to project contributors did (hopefully) those thoughts for us.
[BTW It's possible to get a diff from commits list as well, with a trick by going over trying to start a new pull request, please ask me for details if interested (generally offtopic for this specific issue here).]

updated the changelog for last release, still need to go through the differences between older versions to catch up, help welcome if someone want to read the commit list between two tags and propose a summary in the changelog file.
