Add a script as part of the bootstrap that will upgrade Kurtosis Core for users

It should:

• Pull down the latest kurtosis.sh file
• Upgrade their library to the appropriate compatible version

This will probably require publishing a machine-readable compatibility matrix

Thought: this would be REALLY cool if either a) Kurtosis could be upgraded with something as simple as "upgrade the testsuite-api-lib/lambda-api-lib dependency" or b) the Kurtosis CLI itself could do this
