Add possibility to override logLevel and logFormat in Serverless CR

Description:

We have a system to dynamically change the logLevel and the logFormat for the controller's logs. Still, it's currently not possible to change these values, because Serverless CR does not expose such config and even when we manually change these values in the right configmap, the operator will turn back these changes to the original state.
