Can't Edit Modded Config FIles

When updating the config files for individual mods and restarting the server to apply the changes, the mod configs are overwritten with their default values.

The section: "Mod config from Environment Variables" only mentions modifying the base bepinex or valheimplus configs and provides prefixes to do so.

Is there a way to either fix my config file from being overwritten or to make a custom prefix?
