Add 2 new talks to February 2025 (#373)

* Add 2 new talks to February 2025

* Swap out remote talk for in person talk

This talk I am temporarily removing is remote, and we are yet to
receive confirmation from Funding Circle, our hosts, that they can
accommodate it. So, we are temporarily removing it.

In its stead, we are adding another talk that came in tonight.

* Update number of free slots left
