The "Save and return to course" button and the "Save and display" button perform the exact same action. What is the purpose of returning to the course?

Save and return to the course means you don't see the results of the save. Save and display means it shows the list of items to allow confirming that the dates have updated as expected. I just re-read your question, save and return to the course is if you are confident the update will occur as you expect. Do you think that save and return to course is redundant?. My thinking was that without "Save and return to course", you would need to press cancel to return to the course when you were not really cancelling.

In testing, both return the same page.
