It is common copying tables from MS word.
And It is supported in MS word to set table head row and column as well.

Really hope that the resulting table is the same in MS word, instead of a table with no head.

I made a few tests with Textmaker (SoftMaker Office), since I have no MS Word.

It's not immediately clear to me how to set a row as the table head in Textmaker, but once I was able to get a pasted table with a table head of one row. Other tests were unsuccessful.

I made the tests with the project demo and with pundok-editor, which is the main goal for me to write prosemirror-tables-sections.

I think the solution is a prosemirror plugin that implements the handlePaste hook, at least to see what is passed through the clipboard by MS Word.

Could you send me a small test .docx file?
