If you're making crock pot al pastor, make this too.
- 1/3 of a pineapple, peeled and chopped in 1/2 inch dice
- 2 tablespoons reserved fat from crock pot al pastor OR 2 tablespoons neutral flavored oil such as canola, and 1/4 teaspoon chipotle powder.
- If not using the pork fat, toss the pineapple with the chipotle powder.
- Heat the oil or fat in a pan over medium high heat. When it is hot, add the pineapple.
- Don't stir too much, let it get good and brown, this takes a few minutes. Watch to make sure the pineappled doesn't burn. Stir once or twice to brown a few different sides of the fruit.
- Serve warm.
