Is it possible to have per camera quality setting?

We're already doing this for the doorbell, so it should be possible.

The only downside is that it probably wouldn't work in home assistant mode because of the schema checks.

Yes, it uses the same stream as the app, so any changes here should be reflected in the app and vice versa.

I am confused as to where I put this? If I am using this as an add-on for HA, what file do I add this to?

In the add-on's configuration tab. Click on edit in yaml and add it there.
