In light of the move from apt.kubernetes.io to pkgs.k8s.io (https://kubernetes.io/blog/2023/08/31/legacy-package-repository-deprecation/) it makes sense to update this in the guide.

I've added further updates to use the kubernetes repo for cri-o as that is now the current repo as per https://cri-o.io/. I have also updated the repo formats to use the newer sources format and have removed the cri-o-runc as it is no longer required |

This PR updates the kuberenetes repo in line with the deprecation of apt.kuberenetes.io. At the same time it felt prudent to update the version to 1.28 and to update Calico, MetalLB and Longhorn to their current latest releases.
