doc: Replace CentOS with Rocky / Alma

Unfortunately Red Hat's CentOS is not longer an open alternative to RHEL, this replace it in the setup instructions with Rock / Alma Linux. Signed-off-by: Nicolai Buchwitz <[email protected]>
