Stan's fairly new set of covariance functions can be used to estimate a variety of multidimensional GPs from an array of coordinates (https://discourse.mc-stan.org/t/simple-spatial-guassian-process-model-unable-to-recover-parameters/36105). Could implement these, though of course they will be slow for data with many coordinates
