Previously I've used software called Bear on OSX which had similar interface and functionality.
My feature request is to extend the functionality of the current tagging system so we can apply/create tags from the note itself. When a user adds a hash tag to a note like #foo, if that tag doesn't exist, it's created; but if it does exist, it's attached to the note. I got into the habit of adding three hyphens --- to create a markdown horizontal rule at the bottom of my notes in the Bear software and would add hashtags under it for all of my notes so that way I could easily keep them organized without having to use the mouse.

I'm planning to do that in the future for my next app - Plume (https://www.get-plume.com/). Tho, it won't be open source (at least not at first). There's a high chance I'll port this back to Notes as well tho. Thanks for your suggestion!
