Make lightgallery configuration overrides easier

See this forum post. Users may want to pass custom configuration for lightgallery on initiation, and the way the view helper is currently set up does not allow for that without writing their own version it.

Note to remember when coming back to this: we can probably just pass the overrides flag when loading the lightgallery config js.
