Bug: set explore workspaces to prod staff picks

Describe the bug

Currently the 'Discover Workspaces' items are set to beta workspaces. Instead, it should be sourced from production and made by multiple OpenSauced staff.

Steps to reproduce

1. Go to /explore
2. If in beta, see that placeholder workspaces are in (like SBOM for open-sauced/app)
