was just working on some more peach-config related stuff, and wondering maybe we just get rid of that parameter, and peach is just the default user?

specifiying the username seems to add complexity without much gain. the only gain I can think of right now is if someone already has a user on their linux machine named peach, and they want to keep that user for something else... but that seems like a real edge case

also since most of the services already run as their own user anyway
