as Quarkus 3.8 is LTS it would be nice if there were a [email protected] formula as this seems to be the only mechanism that home-brew still supports for getting a specific version of a package

I can see your point and it's a very good one.

I'm not sure how this particular formula would be updated though. We are using JReleaser (but an old version) to publish to this repository.

I have not used Jreleaser, but I think that as far as homebrew is concerned the [email protected] is just a name, so presumably a separate Jreleaser run could be triggered from the quarkus 3.8 branch with the name configured differently.
