I would like to put OS X in fullscreen mode at 1280x800.

Keep pressing ESC when you start the virtual machine until you get a menu. Now use the arrow key to navigate to the device manager and then the same for OVMF Platform Configuration. The resolution can be set up until 7680x4320.
