Make -vvv the default

Make it so that -vvv is the default so that we don't have to specify it in the command line. It's generally what you want as a cow end user on a laptop so that you can easily see what is going on, and makes it far easier to debug any issues you encounter

There is already existing options for -v (normal output, current default) and -q (quiet) if people desire that
