[Docs] Adding new clouds (DO, vast) to readme/docs #4659

Like in #4573, we should add those new clouds to the doc.

Also we might need to update the cloud figure.

+1 for DO, I believe Vast is already added: https://docs.skypilot.co/en/latest/getting-started/installation.html#vast
