Add HUMAN species.

In 2 places we were using the symbol "Z" to determine 'human-like
zombies':

1. Blood analysis text output
2. Whether a zombie is enzlavable

Now, we check whether the associated monster is also a "HUMAN", which
is much clearer.

Fixes 17267.
